Blue Lizard Sesame Noodles

IMAG0255_1Sesame noodles are a quick, easy, light meal that’s great to have on hand in the refrigerator for lunch on hot days.

  • 12 oz of noodles (spaghetti, linguine, rice noodles, udon, whatever you’ve got)
  • water to cook the noodles
  • 1 lg celery stalk
  • 2 (2 inch diameter) Japanese Salad Turnips
  • 2 carrots
  • 2 cloves of garlic, minced
  • 1 TBSP grated fresh ginger
  • 1 TBSP sesame oil

Slice the celery, turnips, and carrot into matchsticks. Chop the turnip greens finely. Set aside with the garlic and ginger.

Cook the noodles. Drain and rinse.

Quickly stir-fry the vegetables in the sesame oil until crisp/tender. Do not over-cook. You still want some crunch and bright color.IMAG0256_1

Combine the noodles and vegetables, then make the dressing.

  • 1/2 c. tahini
  • 2 TBSP miso (or 2 TBSP soy sauce if you don’t have miso)
  • 1 TBSP sesame oil
  • 1 TBSP honey
  • 2 TBSP mirin
  • 1 TBSP rice vinegar
  • 1 tsp red chili flakes

Combine all and mix well. Pour over noodles and vegetables and toss until evenly coated. Check seasonings. Serve at room temperature or chilled with sriracha or sweet chili sauce.
